Here at Toso we are pleased to offer you everything from traditional classics to more contemporary beverage options. Start the evening with one of our amazing drinks, where we have taken inspiration from old Asian traditions with a fresh modern twist.

Our wine list is carefully chosen to match the flavors in our food with a wide selection of everything from crispy, aromatic Riesling to soft and elegant Pinot Noir or why not combine the food with a perfectly chilled beer from Japan.

Sake

Sake is a fantastic drink we are pleased to serve in combination with our food.
The history and fermentation process are just as exciting as the taste.
Sake is produced in all but one region in Japan, and many other countries.
The beverage is brewed with rice, sweet rice, water and yeast.
The character of sake is influenced by the polishing ratio of the rice and yeast used.

 

Fukuju Awasaki Junmai shu, Sparkling

A second fermentation in the bottle gives the sake a natural, delicate bubble.
The sake has a sweet, fruity character with notes of lychee and peach.
The perfect apertif to start the evening.

Kid Junmai Daiginjo

Daiginjo means that at least 50% of the grain is polished away.
Junmai translates to clean rice, which means that no extra alcohol is added
during filtration. This sake has a full bodied and complex taste, with elements
of citrus, melon and pear.

Fudoh Purple Label Omachi Junmai Ginjo, Nama

A lively sake brewed on Omachi rice with notes of grapefruit, peach, melon
and minerals. In the scent you find citrus, pineapple and a soft earthiness.

Keigetsu Aikawa-Homare Yamahai Junmai

This sake has a taste and aroma with notes of caramel and apricot with
hints of malt. There is a nutty character that is balanced with good acidity
and fine minerality.

Shochu

Shochu is a clear distillate produced in all Japanese prefectures with the exception of Okinawa, where it’s instead known as awamori and made from long grained rice. Like vodka, shochu can be distilled from a number of different ingredients such as rice (kome), wheat (mugi), potatoes or sweet potatoes (imo). In Japan shochu is served on the rocks (rokku), with added water (mizuwari), soda (sodawari) or as a warming grog with hot water (oyu). In Japan shochu is consumed as an aperitif, through out dinner or as a digestive afterwards.

It’s popular in Japan to infuse sake with fruit. Both plums and yuzu are popular flavors.
